The Shotoh knife from the Miyabi 5000MCD series is made for precision tasks in the kitchen. With its 9 cm long blade, it is ideal for slicing, peeling and cleaning fruits and vegetables with full control and precision.
The blade has a core of MicroCarbide MC63 powder steel, encased in 100 layers of steel with varying hardness, creating the elegant and unique damask pattern on each blade. CRYODUR® technology ensures the blade is ice hardened at -196°C, resulting in an impressive 63 Rockwell hardness. The result is a blade that is ultra-sharp, flexible and resistant to corrosion.
The blade is hand sharpened using the Honbazuke method, where it is ground on two rotating stones and then polished on a leather wheel to achieve an extremely sharp and smooth finish. The authentic Japanese blade profile and symmetrical 19° cutting angle provide a precise and comfortable cutting experience.
The knife's D-shaped handle is made of exclusive Masur wood, which with its distinctive and unique grain gives each knife an individual look. A mosaic emblem and an elegant end cap complete the refined design. The combination of perfect balance and ergonomic design ensures the knife sits naturally in the hand - even during prolonged use.
