Why a Dedicated Inset

Round soup wells are designed to accept a round inset rather than the rectangular hotel pans used in steam-table service. The inset is what your food actually goes in; the well is the heated holding vessel. Replacement insets are common service items as the original gets dented, stained, or develops scratches that catch food.

Mirror Finish

Mirror-polished stainless looks cleaner on a visible buffet line vs brushed-finish stainless. For open-kitchen restaurants where the line is visible to guests, mirror is the appropriate finish; for back-of-house heated holding, brushed is fine.
