• “Sliced biscuits, made with the finest flour, sugar, and egg whites.” That’s how, at the end of the 1600s, the Accademia della Crusca described Cantucci, just before they were enriched with almonds (strictly whole, with their skins) and began their journey to conquer the world. They are, in every sense, bis-cotti (twice baked), but not everyone knows that Cantucci first meet the oven as long loaves, only to be sliced before their second bake. It’s precisely this cut that gives them their unmistakable texture and ensures their long and precious shelf life.
  
  Softened when dipped into their eternal companion, Vin Santo, Cantucci are delightful on their own, or served with whipped cream or custard.
